中文摘要: 氢化油脂中反式脂肪酸引起的食品安全问题受到了人们重视,油脂酯-酯交换是一种可替代油脂氢化生产功能性油脂制品的方法,可控制备其多相碱催化剂并研究催化作用本质对绿色食品加工和食品安全有重要意义。本项目拟在前期工作基础上,设计和构造以氧化物为载体的无机和有机固体碱,通过控制和调变碱种类和碱量,提高催化剂活性和稳定性,研究制备方法和条件对催化活性和选择性的影响。用比表面积测定、XRD、XPS、DTA-TG、IR、SEM、AFM、NMR、TPD和Hammett函数滴定等技术对催化剂组成、表面物质结构、聚集形态及表面性质进行表征,研究催化活性中心及其与制备方法和条件的关系,探讨表面物质结构与催化性能的关系,研究催化活性受表面物质聚集形态和表面性质的影响规律,探讨催化剂组分相互作用。期望通过对催化剂的可控构筑,对其进行优化设计和性能调控,弄清表面物质结构、聚集形态、表面性质与表观催化性能的构效关系。

英文摘要: Food safety issues caused by trans-fatty acids from hydrogenated oil have received much attention. Interesterification of fats and oils is a promising alternative method for partial hydrogenation to produce edible functional oil products. Controllable preparation for the heterogeneous base catalyst and research on the catalytic nature are of significant interest for green food processing and food safety. On the basis of our previous work, in this project the inorganic and organic solid base with oxides as carriers will be designed and fabricated through varying the base type and base amount, in an attempt to improve the activity and stability of the heterogeneous catalysts and ascertain the effect of preparation method and preparation conditions on the activity and selectivity of the heterogeneous catalysts. The chemical composition, the surface structure and property of the catalysts will be characterized by using BET surface area, XRD, XPS, DTA-TG, IR, SEM, AFM, NMR, TPD and Hammett titration method to investigate the influence of preparation method and conditions on the catalytic active sites and relate the catalytic activity to the surface structure of the catalysts.
